Meat and potatoes, Southside style! It’s amazing how well a few simple ingredients come together to make a phenomenal family dish. Try our Country Style pork sausage, loaded up with our specially seasoned mashed potatoes and cheese. Quick to assemble and even faster to disappear from the dinner table!

- 4 Links Southside Country Style Sausage
- 1 Tbsp. oil
- 1 ½ cups mashed potatoes (fresh/hot)
- 6 - 8 oz. sharp cheddar cheese
- 1 Tbsp. butter
- 2 Tbsp. sour cream
- 1 tsp Dijon mustard
- ¼ tsp salt
- Southside Oak Smoked Black Pepper (to taste)
- ¼ cup fresh minced chives (optional)
In a skillet over medium heat, brown sausage with 1 Tbsp. oil until internal temperature reaches 165F. Turn several times to ensure even heating. If using a grill, heat links for approximately 20 minutes at 350F turning halfway through to ensure even heating.
While sausage is heating, mix 1 ½ cups mashed potatoes with one ½ cup cheese, butter, sour cream, Dijon, salt and oak smoked back pepper. Set aside.
Once sausage is fully heated, split each link lengthwise, careful not to cut all the way through the casing so that you end up with a hinged, open-faced sausage link. Think hot dog bun, except its sausage!
Load up each sliced link with about 1/3 cup potato mixture and top with remaining shredded cheese. Move stuffed links to a parchment lined baking sheet and broil for 2-3 minutes or until cheese is melted and lightly browned.
Garnish with fresh chives and serve immediately!
