Ingredients
- 4 links Southside Country Style Sausage
- 1 large red bell pepper, finely chopped
- 1 large yellow bell pepper, finely chopped
- 10 eggs
- 2 Tbsp. butter
- 1 tsp Italian seasoning
- 1 tsp salt (to taste)
- ½ tsp Southside Oak Smoked Black Pepper
- ½ cup shredded Parmesan cheese
Directions:
Slice sausage into rounds and then quarter each slice for small bite-sized pieces. Sauté sausage with chopped peppers in large skillet over medium heat for 10 – 12 minutes.
While sausage and peppers are cooking, whisk your eggs with Italian seasoning, salt, and oak smoked black pepper. Set aside.
Once sausage is browned and peppers are soft, set mix aside in a paper towel lined bowl. Wipe skillet with a clean paper towel and reheat for eggs.
Melt butter and cook eggs, agitating frequently for even cooking. Just as eggs begin to set, fold in sausage mixture.
Continue gentle stirring until eggs are firm. Top with Parmesan and serve hot off the stove.
