Fashioned as a savory side, this dish could easily take center stage as the main course. We start with our robust Southside Garlic Sausage and add in the hearty goodness of red potatoes with a dash of mustard for extra zip. A simple, delicious way to bump up your next meal plan.
- 4 Links Southside Garlic Sausage, sliced
- 2 lbs. red potatoes, sliced into equal sized pieces
- 4 Tbsp. whole grain mustard
- ½ tsp. salt
- ½ tsp. ground black pepper
- 4 Tbsp. butter
- ¼ cup chives, diced (optional)
Preheat oven to 350F or if using a BBQ grill, heat to 350F with an indirect setup using post oak wood.
Wash & cut the potatoes into halves or quarters, depending on their size and place into large mixing bowl.
Combine sliced sausage, potatoes, mustard, salt and ground pepper
Divide potato and sausage mixture amongst 4 pieces of foil (18”x18” each) and top each with 1 Tbsp. of butter. Crimp the edges of the foil together to form packets.
Cook packets in oven or on a grill indirect for 20-25 minutes until sausage reaches 165F internal temperature and potatoes are tender.
Serve warm and garnished with diced chives.
