- 4 Bolillo Rolls
- ½ cup pickled jalapeños (or fresh if you have them)
- ½ cup cheese sauce (see ingredients below)
- Sliced onions
- 1 lb quality American cheese
- ¼ lb mozzarella cheese
- 1 cup half & half creamer
Preheat oven to 375F or if using a BBQ grill, heat to 375F with an indirect setup.

Cheese Sauce Directions:
In a non-stick pot, melt American and mozzarella cheeses together over medium low heat, stirring frequently.
Once cheese has melted, add creamer and stir until combined. Remove from burner and set aside, keeping warm.
Heat sausage in the oven on a baking sheet (or grill) for 10-15 minutes or until the internal temp is 165F, turning once for even heating. Remove finished sausage from heat and set aside.
Toast buns either under the broiler on the grill – no more than 1 minute.
Begin assembly – bun, sausage, onions (if desired), cheese sauce, pickled jalapeños, and Southside Oak Smoked Black Pepper to taste. Serve warm.
