Southside Smoked Sausage & Hash Brown Breakfast Bake
Wake up your days with this easy cheesy breakfast bake featuring our Southside Smoked Sausage! This one includes all your favorite food groups; sausage, cheese, eggs, and potatoes, AND, you can even make ahead for a quick and easy morning pick me up! Pictured with our Country Style Sausage, this recipe also works great with our Original Beef Sausage and our Garlic Sausage.
Prep: 10 – 15 minutes (including assembly)
Cooking Time: 45 – 60 Minutes
- 4 Links Southside Smoked Sausage, diced – Country Style or Original Beef recommended
- 1 bag frozen hash brown shredded potatoes, thawed (24 oz.)
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1/2 white onion, diced
- 12 eggs
- 1 cup milk
- 1 cup shredded sharp cheddar cheese
- 1/2 tsp salt
- 1/4 tsp Southside Oak Smoked Black Pepper
Preheat oven to 350F. Spray a 13″ x 9″ pan with cooking spray.
In a large skillet over medium heat, add olive oil, then onions and bell peppers. Cook, stirring often, for about 3 minutes. Add sausage and continue to cook and stir for another 3-4 minutes, or until vegetables are soft. Set aside.
In a large bowl, whisk together eggs, milk, salt and pepper until well combined.
Layer thawed shredded potatoes in the bottom of the pan. Top with sausage and pepper mixture, then cheese, then eggs. Use a fork or spoon to stir ingredients together slightly to make sure that the eggs are evenly distributed.
** At this point, you can return the casserole to the fridge if you plan to cook it within 8-12 hours. Great way to make ahead for the next day!
Bake casserole uncovered at 350F for 1 hour. Let cool before serving.
