All meat should be thawed completely before heating. Cooking times/temperatures may vary depending on your equipment.


Sausage should always be heated to an internal temperature of 165°F. When the natural juices of the sausage break through the casing, that’s a great indicator that the sausage is ready.

Method #1: Smoke it Create a wood fire in a BBQ pit. Maintain a cooking temperature of 200-250°F, and turn sausage several times to ensure even smoking. Heat the Fully Smoked sausage 30-45 minutes until 165°F. Smoke the Fresh (Raw) sausage for 1½ -2 hours until 165°F.

Method #2: Grill it Always grill sausage over indirect heat. Simply build your coals on one side of the grill and place the sausage on the other side of the grill. If using a gas grill, cook the sausage on the opposite end from the heat. Grill at 300-350°F turning the sausage once during cooking time. Fully Smoked sausage should be grilled for 15-20 minutes until 165°F. Fresh (Raw) sausage should be grilled for 40-50 minutes until 165°F. The heat can be reduced as desired, but in this case the cooking time will need to be increased.

Method #3: Sauteé it Heat sausage links with 2 tablespoons of oil in a skillet over medium heat. Turn several times to ensure even cooking. The sausage is ready when the internal temperature reaches 165°F. They will be plump with a taught casing and clear juices.


All Meats

GRILL: Wrap in foil and place on BBQ pit/grill over indirect heat (300°F) until internal temperature reaches 165°F.

OVEN: Wrap in foil and place in a 350°F conventional oven for specified time or until internal temperature reaches 165°F.

Sausage Slammers

GRILL: Place on 325°F grill for 15 minutes. Turn over and continue heating for an additional 10 minutes, or until internal temperature is 165°F.

OVEN: Place on a sheet pan in a 325°F oven for 20 minutes. Turn over and continue heating for an additional 10 minutes, or until internal temperature is 165°F.

You will receive a tracking notification from FedEx or UPS as soon your package is picked up & scanned by our delivery drivers. Packages are shipped from Texas.

Delivery Dates
Delivery dates can be selected at checkout but are not guaranteed. We aim to deliver orders based on selection, but production and shipping times can alter this timeline. We suggest you select a date earlier then needed to ensure your item arrives in a timely manner. Refunds will not be issued if a selected delivery date is not met.

Shipping Address Accuracy
A physical shipping address is required. Our carriers do not deliver to P.O. Boxes. Please ensure your shipping address is current and complete prior to finalizing your order. We cannot be responsible for delivery problems or delays resulting from an incorrect or incomplete address as provided by the customer.

All orders ship via FedEx Ground, UPS Ground and FedEx Home Delivery are the most economical shipping options we can offer. Please note that expedited services DO NOT deliver on Saturday/Sunday including: Express Saver, 3 Day Select, 2nd Day, and Overnight/Next Day delivery.

Order Processing
Most orders received by 10:00am CST are typically processed within 1-3 business days depending on transit days to desired delivery address. Holiday volumes will effect order processing times. Delivery can take up to 7-10 days depending on when the order is placed, where the package is going, and which shipping method you choose.

We cannot ship to international addresses.

Perishable items are shipped frozen and packed with dry ice. It is not uncommon for the ice to dissipate before delivery; however, the meat should still be cool to the touch upon arrival.

Gift Sets are exclusive to the online store and are not available in the restaurant. Many of the same items are available in the restaurant individually; however, the pricing may be different.

How are items shipped?
All perishable items are shipped frozen with dry ice. Dry ice may dissipate during shipment but items will remain in frozen condition.

How long will it keep?
If items remain unopened and frozen, they will last up to 6 months in the freezer. If defrosted in the fridge, we recommend eating within 5-7 days

How much should I order?
That depends on who you are feeding. We generally recommend 1/2 lb of brisket per person and/or 1-2 sausage links.
